Royal Dessert:Steamed the mini bread of corn
The legend about Cixi and the mini bread of corn
In 1900, Empress Dowager Cixi fled to Xian(city in China) to steer when the Eight-Power Allied Forces invaded Beijing.On her fleeing way,She had hungry very much one day.Her servant finded a bread of corn
for her.She ate it very fast then praised delicious.
Cixi returned to Beijing from Xi’an,one day she reminded of that bread of corn,she ordered the royal chef to cooked the bread of corn for her to eat.The chef could’t cooked the bread of corn in the same with that one.
So,the chef filtered the corn flour and mix the sugar and chesnuts to make the mini bread of corn for her.After Cixi ate that and felled very pleased.She said that as good as the past one.
(Cixi ruled over the whole China for forty-seven years.)
Key material:
shelled Chestnuts 150g,Corn flour 100g,Bean dregs 80g,dried milk 20g
Seasoning:
sugar 50g,butter 30g
Before cooking:
1. The corn flour filtered through the sieve
2. Steamed the chestnuts and shell them then crush them
Cooking processes:
1. Mix all key material and seasoning and make it to dough(there are some waterbean dregs)
2. Cut the dough to some sections(size of the cherry)
3. Make one section to bread of corn(see the figure)
4. Steamed all bread of corn about 20 minutes
Attention:
1.If there is no bean dregs,You can use soybean powder and egg substitute.
2.In order to more easily cooked, the lower part of a hole
