Today’s dish is special in Wuxi of China.“Sugar And Vinegar” major Chinese cuisines have a taste.It originated from the Wuxi in Jiangsu.Now, Jiangsu, Zhejiang, Sichuan dishes in the widely circulated.Many of the popular gourmet like this.
Key material:
250 g Pork spareribs,ginger,green onion,some sesame(optional)

Seasoning:
4-6 tbsp Black cice vinegar,3 tbsp Sugar,3 tbsp Light soy sauce
Before cooking:
1.Clean the spareribs and chopped into about 5cm segments.
2.Slice the ginger about 4 tablets.

3.Chopped 1 stalk green onion into small segment.
Cooking processes:
1. Rinse the pork spareribs and cut into 5cm pieces. Bring a pot of water to boil and poach the pork spareribs. Drain and set aside.

2. Preheat a wok or large frying pan with some oil. Add in sugar and stir-fry until it has melted and browned. Add in green onions and ginger slices and stir-fry until fragrant. Return the parboiled spareribs to the wok and fast-fry for 3-5 minutes. Pour in water, vinegar and light soya sauce. Water has to cover the pork.

3. Simmer until the garvy has reduced to half. Turn the heat down and simmer until the gravy has thickened. Dish off.

4.Sprinkle some sesame seeds if desired.
