Today’s special is a famous snack in China.It named Shao Mai in China. The southerners like eat this in China.If you like seafood you will choose put a shelled shrimp on top of Shao Mai.
Key material:
glutinous rice 600g,
wheat starch 500g,
pork 150g,
dried mushroom 50g,
Seasoning:
soy sauce,
salt,
sugar,
chinese wine sauce(chinese rice wine),
essence of chicken,
Before cooking:
1. Give the glutinous rice a long soak before cooking,the time more than four hours.
2. Pour the boiled water(150g) into the wheat starch. Mix to form a dough.
3. Add the cold water(100g) and knead until the dough smooth.
4. Mince the cleaned pork, ginger ,green onion and the dried mushroom soaked in the water.
5. Steam the soaked glutinous rice without water until it is done.
Cooking processes:
1.Fried the minced pork in the pot with warm oil and add in the dried mushroom,ginger and green onion.
2.Add a little salt,sugar and chinese wine sauce in the pot then pour the cooked glutinous rice and mix them.
3.Pour in the soy sauce and essence of chicken in the pot and stir until well-combined then pick them to a prepare plate.(This is stuffing)
4.Divide the stuffing into 30 portions and set aside.
5.Divide the dough into 30 portions,each about 15 grams.
6.Flatten each piece of dough about 9 cm in diameter to become the skin of Shao Mai.
7.Place a portion of stuffing in the center of each skin and form the skin into a loose four-cornered hat, then press each corner towards the stuffing.The dumpling should now look like a cupcake.
8.Make a circle of your thumb and first finger around the middle of the dumpling and tighten the circle gently to press the wrapper to the filling and give the dumpling an empire “waist”.
9.Steam the dumplings for 20 minutes on an oiled steamer rack and serve.

1.Attention for the skin of Shao Mai.The middle area is thickly and the around area is thinly.
