Today’s special named Lv da gunr in China.It is the most famous snack in BeiJing.Lv da gunr ( Glutinous Rice Rolls with Sweet Bean Flour):also called Pastry Made of Soybean Flour, is an old Beijing snack.It used to be made of millet flour, but now the material is mainly rice flour.It is a block with a layer of red bean paste inside.It is also called pastry made of soybean flour as it turns yellow after being rolled in soybean flour.
Why is it also called Lvdagunr?Because the soybean flour on the surface looks like the dust a donkey raises when it rolls in the wild, hence the name Lvdagunr(rolling donkeys).
Key material:
glutinous rice powder 100g,
Wheat starch 25g,
water 150ml,
Soybean flour 100g,
Red beans stuffing 200g,
Seasoning:
sugar 20g,
shortening 20g,
Before cooking:
1. Pour the water into the wheat starch and glutinous rice powder then mix to form a dough.
2. Add sugar and shortening then knead until the dough smooth.
Cooking processes:
1. Steam the dough about 20 minutes.
2. Turn heat down then stir the soybean flour until it looked golden.
3. Flatten the dough and red beans stuffing then place a portion of filling in middle and roll up.
4. The cooked soybean flour cascade on the roll and coat outside with the soybean flour.
5. Divide the roll into some portions.
Attention:
1.Stir the soybean flour must be a small fire.To prevent charred.
2.Coat a little water outside of the knife to divide for prevent the adhesion.
