Seasoning:

1/2 tsp sugar,

1 tsp salt,

1 tsp essence of chicken,

5 tsp olive oil,

Before cooking:

1.Give black fungus a long soak before cooking then clean it.

2.Skin chinese yam and slice it.

3.Mince the gailic and set aside.

Cooking processes:

1.Scald the sliced chinese yam in the boiling water about 30 seconds.

2.Stir-fry the garlic with olive oil over the medium heat until the garlic appears golden in colour.

3.Add in sliced chinese yam and turn the heat down and stir briefly and let cook for about 3 minutes.

4.Add in black fungus without water and flavour with a little salt and essence of chicken .

5.Simmer for 3-5 minutes until all are cooked and flavour with a little more sale and sugar if desired .
