Chinese Food Recipe: Hot and Spicy Crayfish

I introduce this Chinese cuision for all,because it is a popular dish in China in recent years.Chinese called this is “Ma xiao”.If you visit my blog and read top 10 in Beijing about a food street so eat this is fashionable thing.If you feel like hot and spicy,you must be try this.
From today I would like to introduce you to some Chinese characters. I talk about name of today’s special.Ma xiao is short title,its full name is Ma La Xiaolongxia(麻辣小龙虾).Ma(麻)meaning Numb.La(辣)meaning hot.So MaLa(麻辣) meaning hot and spicy.Xiao(小) meaning small,Long(龙) meaning dragon.Xia(虾) meaning shrimp,But Longxia(龙虾) is a term.it means lobster.Xiaolongxia(小龙虾) meaning crayfish,because of crayfish like small lobster.
Key material:
Crayfish 500g
Dry hot chili 100g
Wild pepper 50g
Ginger 40g
garlic 30g(4 cloves)
green onion (1 stalk)

Seasoniong:
0.5 tsp salt
1 tsp sugar
0.5 tsp Chinese chicken essence
0.5 tbs Chinese rice wine(Chinese wine sauce)
1 tbs soy sauce
2 tbs vinegar
Before cooking:
1.Clean the crayfish,wash them twice then put them in salty water about 1 hour to soak out dirty things.(least 2 tbs salt)

2.Cut the green onion about 1 cm long.
3.Skin garlic and ginger then slice .

Cooking processes:
1.Scalding the cleaned crayfish in the boiled water about 3 minutes then pick them out and wash them by warm water.
2.Heat up with oil and add in onion,garlic until fragrant then fried hot chili and wild pepper.


3.When you smell spicy you add the crayfish in the pot then pour in all seasoning.

4.Add in water and cook about 5 minutes until the crayfish was wrapped in broth ,so dish off.
