Today’s special named Zheng Pingyu in Chinese.Zheng(蒸) is steam in English.Pingyu(平鱼) is flatfish.Ping.Yu(鱼) is fish in English.

Key material:
Flatfish
Green onion 20g
Ginger 20g
Red pepper 5g
Coriander 5g

Seasoning:
0.5 tsp salt
2 tbs olive oil
1 tbs Chinese rice wine(Chinese wine sauce)
1 tbs seasoned soy sauce for seafood

Before cooking:

1.Clean and gill the flatfish then break its skin.
2.Shred half ginger,half green onion,red pepper and coriander.
3.Slice other half ginger and green onion.

Cooking processes:

1.Put the sliced ginger and green onion on the serve plate then been covered flatfish.
2.Add the sliced ginger and green onion on the flatfish then pour in a little salt and Chinese rice wine.
3.Heat up with more water in the steamer,when boiling,steam the flatfish about 10 minutes.
4.After 5 minutes from heat off,pick the flatfish,Put shredded ginger,green onion,red pepper and coriander on flatfish.

5.Heat up with oil in the pan,when it is hot,pour in the flatfish then add in seasoned soy sauce for seafood. Dish off.

Attention:
After turn off fire ,the steamer-lid must be covered about 5 minutes .
