Quick-fried lamb with Scallion in Ginger Sauce

Lamb has always been regarded as an important food in winter tonic one. This dish is also a well-known Chinese cuisine. This cooking method is actually very simple, but tastes is good. Do you want to taste this? Well, let us begin.
Ingredients:
Mutton-chip (500g)
Egg (one piece of)
Green onion (one stalk of)
Ginger (three slices)

Marinades:
½ tbsp of salt
1 piece of egg white
1 tbsp of starch
1 tbsp of water
Sauce:
1 tbsp of soy sauce
1 tbsp of Chinese rice wine
1/3 tbsp of salt
1/3 tbsp of essence of chicken
½ tbsp of starch
3 tbsp of water
Seasoning:
5 tbsp of oil
1 tbsp of Chinese rice wine
½ tbsp of sesame oil
Methods:
1.Put Mutton-chip with marinades in a bowl then mix and hold at least 15 minutes .

(after 15 minutes)

2.Clean green onion and slice it.

3.Mix sauce in a bowl,stand by.

4.Heat up with oil and frid ginger and green onion unril fragrant,quick-fried Mutton-chip with seasonging about 1 minute.

5.Pour in sauce and go on cook one minute,dish off.
